Snowy eggplant is a white-skinned variety with tender flesh and a mild, slightly sweet flavor. It grows best in warm climates with full sun and well-drained, fertile soil. Start seeds indoors 8-10 weeks before the last frost and transplant after all danger of frost has passed. Space plants 18-24 inches apart. Water regularly and provide support. Harvest when fruits are firm and glossy, about 4-6 inches long, for optimal flavor.
