Ancho peppers, the dried version of poblano peppers, are mild, heart-shaped chili peppers with a rich, smoky flavor. They are commonly used in Mexican cuisine for sauces, stuffing, and spice blends.
Start seeds indoors 8-10 weeks before the last frost in well-drained soil with a pH of 6.2-7.0. Keep temperatures around 75-85°F (24-29°C) for germination. Transplant to full sun, spacing plants 18-24 inches apart. Provide consistent moisture and fertilize with balanced nutrients. Harvest fresh poblano peppers in 70-80 days, or allow them to ripen to red and dry for ancho peppers.
