Huacatay, also known as Peruvian black mint, is a fragrant herb native to South America. Despite its common name, it is not a true mint. The tall, bushy plant has narrow green leaves and produces small yellow flowers. Its distinctive flavor is often described as a combination of mint, basil, tarragon, and citrus, making it an important ingredient in Peruvian and Andean cuisine.

Huacatay is commonly used to flavor sauces, stews, soups, potatoes, beans, and grilled dishes. It is especially well known as the key ingredient in traditional Peruvian huacatay sauce, a creamy, flavorful condiment often served with roasted potatoes, vegetables, or grilled foods. The fresh leaves can be chopped and used like other culinary herbs.

To grow huacatay from a starter plant, choose a sunny location with well-draining soil after all danger of frost has passed. Plant it at the same depth it was growing in its container and space plants about 18 to 24 inches apart. Water thoroughly after planting and keep the soil evenly moist while the roots become established. Once growing strongly, huacatay is relatively easy to care for and can tolerate short dry periods.

Plants can grow several feet tall, so regular harvesting or pinching encourages bushier growth. Harvest young leaves throughout the summer and use them fresh or dry them for later use.
