Rhubarb plant

Rhubarb plants are hardy perennials with thick, tart stalks and large, green leaves (which are toxic). They thrive in cool climates and return year after year. When your rhubarb starts arrive by mail, unpack them immediately and inspect the roots. If planting isn’t possible right away, keep the roots moist and store them in a cool, dark place. Plant in well-drained soil with full sun, spacing them about 3 feet apart. Water regularly and avoid harvesting the first year to allow strong root development for future growth.
